Beijing Roast Duck is widely regarded as the most delicious food of Beijing. Besides climbing the great wall, it is also a must-do to eat roast duck while travelling in Beijing.
As early as in Yuan Dynasty (1206-1368), at which time Beijing was the capital city, roast duck was recorded as an imperial dishes by Hu Sihui in the book Complete Recipes for Dishes and Beverages. Hu Sihui was an inspector of the imperial kitchen.
